Potatoes are a fantastic side dish, even on a diet. But eating boiled potatoes all the time can get a bit boring after a while. That’s why today we’ve prepared these simple potato latkes, baked in the oven, which unlike traditional potato pancakes, don’t contain unnecessary amounts of fat. They’re perfect for weight loss.

Method:

Thoroughly wash, peel, and grate the potatoes coarsely. Sprinkle a bit of salt over the grated potatoes, mix well to distribute evenly, and let them release water. After about 15 minutes, squeeze out the water and drain. Finely chop the onion and garlic, and grate the Parmesan cheese. In a bowl, combine the grated potatoes, onion, garlic, egg, flour, and Parmesan cheese. Season with salt, pepper, and oregano to taste. Mix everything thoroughly.

Prepare a baking sheet lined with parchment paper and shape small pancakes from the prepared mixture on it. You can use a spoon to help shape them. We made 8 pieces from the entire mixture. It’s better if you try to make all pancakes equally thick so they bake evenly. Once everything is prepared, place them in the oven and bake at 190°C for about 25–30 minutes. Serve immediately after baking.

They’re great as a side dish, but you can also enjoy them on their own, with salad, and perhaps complemented by a quark dip with herbs.
